1.Bairen Quan Duck

[Source] Folk proven recipe

[Functions] Tonify the Spleen, strengthen the stomach, nourish yin and benefit the Kidneys.

[Indications] Vomiting and nausea due to Spleen deficiency, Kidney yang deficiency, excessive dreaming during sleep, tidal fever with bone steaming, red and white leucorrhea, spermatorrhea, and other signs of imbalance.

[Formula] 30 grams of Coicis Semen, 50 grams of Hunan lotus seeds, 30 grams of Gorgon Fruit, 30 grams of Hyacinth Bean, 100 grams of glutinous rice, 1 fat duck (about 1500 grams), 15 grams of dried shrimps, 50 grams of cooked ham, 30 grams of mushrooms, 1000 grams of vegetable oil (actual consumption 50 grams), 12 grams of Shaoxing wine, appropriate amounts of pepper powder and salt.

[Preparation Method] Peel and remove the cores from the Xiang lotus seeds. Cook the hyacinth beans and then peel them. Rinse the glutinous rice and soak it in water for 5 minutes. Remove impurities from the coicis seeds and gorgon fruits, and soak them in warm water for 15 minutes. Soak the dried shrimps in warm water until fully rehydrated. Soak the mushrooms in warm water for 10 minutes, rinse off the sediment, trim off the stems, and cut them into 1-centimeter cubes. Select skinless lean and fatty ham and cut it into 1-centimeter cubes. Drain the water from the above eight ingredients, place them together in a steaming bowl, add Shaoxing wine, salt, and pepper, mix well, and steam for 30 minutes in a steamer. Remove from the steamer to make the eight-treasure filling. After slaughtering the duck, remove the feathers, wash it thoroughly, open the abdomen to remove the internal organs, and chop off the feet. Place the duck on a cutting board and make a cut along the top of the neck, about 7 centimeters long. At the incision in the throat, cut through the cervical vertebrae, keeping the duck head connected to the neck skin. Then, remove the neck bone from the incision. Next, place the duck with its tail down on the cutting board, turn the skin and flesh inside out while using a knife to remove the bones all the way to the tail, removing all bones except for the two wings (during the deboning process, ensure the duck meat remains intact and the duck skin is not torn). Then, turn the duck skin back to its original position to form a boneless whole duck. Stuff the eight-treasure filling into the duck’s abdomen, tie a knot with the duck neck skin at the incision to helps maintain the filling from leaking out. Then, place the duck in a soup pot and scald it for 3 minutes, remove it, and then use tweezers to remove any remaining fine hairs in clean water. Mix Shaoxing wine, salt, and pepper evenly, and spread the mixture all over the duck’s body. Place the duck with its abdomen down and back up in a large steaming bowl, with the duck head placed between the two wings, and steam for 1 hour and 30 minutes in a steamer. Remove from the steamer and let it air dry. Heat the oil in a wok, pour in vegetable oil, and when the oil is 80% hot, place the duck in the wok and fry until the skin is crispy and turns golden brown, then remove it. Arrange the duck in its original shape on a plate.
