Processing
Wash the animal thoroughly; take the meat from the four legs, neck, and back; remove the tendons and membranes; and cut the lean meat into chunks the size of chestnuts, weighing 30 jin or 40–50 jin. In a quiet room, place the meat in a large copper pot (or, if unavailable, a new iron pot) and simmer it with a steady stream of running water, stirring occasionally.In a separate new pot, bring water to a boil and add it gradually to the pot, ensuring the water always covers the meat by 5–6 cun. Skim off the scum and continue boiling until the meat is as soft as mud; then strain out the residue.Then strain the meat broth through a fine cloth into a small copper pot. Using only mulberry wood firewood, adjust the heat to a steady, moderate flame, and stir continuously without stopping. Do not add any boiled water; simply simmer until the broth gradually thickens to the consistency of thin syrup—it should not disperse when a drop is placed in water—and turns the color of amber. The extract is now complete. Extreme care must be taken with the heat control during this step; otherwise, the extract will be ruined. Generally, for every 12 jin of meat, one can produce approximately 1 jin of extract, which should be stored in porcelain containers.This is known as “Xiatian Paste.” When used to prepare decoctions, start with a small amount and gradually increase it; it will naturally dissolve when the liquid comes to a boil. If used to make pills, mix 1 fen of wheat flour with every 3 fen of the paste, then boil them together into a paste, or mix it evenly with refined honey. During cold weather, store it in a dry place; if mold appears, boil it in a double boiler. In hot weather, cool it in cold water; it can be kept for 3 days.
