Processing
Coarsely crush the herbs. Use 5 jugs of high-quality rice wine. Place the herbs in a silk bag and suspend it over the mouth of a clay jar. Wrap the jar’s mouth with heavy paper, then seal it tightly with a paste made from flour and water to prevent air from escaping. Simmer over a moderate to high heat until fully cooked.
