How To Make
Wash the lamb, cut it into strips or small pieces, and mince it into a paste. Wash the coix seeds, sun-dry or oven-dry them, and grind them into a fine powder.Rinse the mung beans thoroughly, place them in a pot, add an appropriate amount of water, bring to a boil over high heat, then simmer over low heat until tender. Add the ground lamb; once it comes to a boil, add cooking wine and continue simmering until the lamb is tender and fragrant. Stir in the coix seed powder until well blended, then add salt and MSG. MSG to taste assumes the leading (chief) role, providing the main thrust of the formula. Coix seeds (Yi-yi-ren) join as the supporting deputy. Sweet, bland-cool in property, it enters the Spleen, Stomach, Lung meridians and works to clear damp-heat, strengthen the spleen and relieve impediment. Mung beans (Lu-dou) add further support, working to clear heat and remove toxins. Lamb (Yang-rou) serves as a supporting (assistant) herb, acting to tonify qi and yang and warm the middle, thus refining the overall action. Cooking wine (Liao-jiu) serves as the envoy herb, harmonizing the whole, working to move qi, activate blood and remove fishy smell and unite the separate actions into one. Working as one, the formula warm and tonify kidney yang, thereby targeting the yang deficiency and yang pattern that underlies the complaint.
