Processing

Harvest daily, selecting only the red, ripe berries; remove the tender stems and seeds, wash them thoroughly, and immediately store them in a clean vessel with ash-free wine;It must be a jar; soak them in wine for a maximum of two months, seal tightly with waxed paper to prevent air from entering. Once the required time has elapsed, strain the mixture and transfer it to a new bamboo container. Grind it in a sand mortar until it becomes a fine paste, then strain it through a fine cloth. Once the grinding and straining are complete, discard the residue. Mix the ground paste thoroughly with the original medicinal wine and the strained liquid,Measure the volume in the silver pot in sheng or dou, and simmer over low heat in batches until it becomes a paste. It is essential to stir continuously with a utensil to prevent it from sticking to the bottom and becoming uneven. Once the consistency is just right, transfer it to a clean bottle or container, ensuring no air escapes.
