Spinach (Amaranthus sp.), a plant of the Amaranthaceae family.

Morphological Characteristics

The plant can grow up to 1 meter tall and is non-powdery. The root is conical, reddish, and rarely white. The stem is erect, hollow, fragile, and succulent, unbranched or with few branches. The leaves are lanceolate to ovate, bright green, tender and succulent, slightly glossy, with entire margins or a few tooth-like lobes.Male flowers are arranged in globose corymbs, which in turn form discontinuous spicate panicles on the upper parts of the branches and stems; the perianth segments are usually 4 in number, the filaments are thread-like and flattened, and the anthers lack appendages; female flowers are clustered in the leaf axils; the bracteoles are slightly flattened on both sides, with two small teeth remaining at the apex, and usually bear one spiny appendage on the back;the ovary is globose, with 4 or 5 protruding stigmas. The capsule is ovate or nearly circular, approximately 2.5 mm in diameter, and laterally compressed; the pericarp is brown.
