Processing

Soak the glutinous rice in water for 35 days, until the rice turns sour. Rinse thoroughly, dry in the sun, and pound into a fine powder. On a sunny day, mix the glutinous rice flour with fresh water to form dough balls about the size of a cup’s rim. Peel the sweet potato roots, wash off all sand, stones, and soil, and slowly grind them into a paste—it must be extremely fine, without adding water.Boil the glutinous rice dumplings until cooked, then transfer them to a jar. Use a wooden pestle to vigorously stir them into a porridge. Wait until it reaches the right temperature—roughly when it is cool enough to handle. Pour in the sweet potato pulp, using 1 jin of pulp for every 3 dou of glutinous rice flour, and stir until thoroughly mixed.First, sift the dry starch onto a flat surface. Next, place the porridge on top of the starch, dust it with more dry starch, roll it out thinly, and sun-dry until half-dry. Cut it into dice-sized pieces, sun-dry until completely dry, and store.

Instructions for Use

To prepare, heat a wok over low heat. Add about 2 he, and stir-fry gently. After a short while, the mixture will gradually soften and form into round beads. Next, add white sugar and sesame seeds—or additional spices if desired—and stir-fry until well combined. Allow to cool completely; the mixture will become light and fluffy. For every 2 sheng of glutinous rice, you can make 1 dou of this treat.
