Gradually add 8 dou of water, grinding and straining as you go, until all the juice is extracted and the residue is removed. Simmer the mixture down to 4 dou and taste it; if it is fragrant and smooth, it is ready. Pour it into a non-porous earthenware jar, cover it according to standard procedure, and ferment it in three batches.First Fermentation: Take 6 dou of glutinous rice, cook it into rice, and mix it with 12 jin of malt powder; also take 4 sheng of apricot kernels and grind them to a paste, gradually adding 1 dou 6 sheng of water to extract 8 sheng of liquid. When the temperature is appropriate, pour it into the jar containing the previous mixture and ferment it until the rice breaks down into a paste.Second Fermentation: Take 2 dou of glutinous rice and cook it into rice; mix it with 4 jin of malt powder. Additionally, take 3 sheng of almonds and grind them into a paste; gradually add 1 dou 1 sheng of water and simmer to reduce to 6 sheng. When the temperature is just right, pour this into the jar containing the previous mixture.Third fermentation: Use the rice, malt, and almond decoction, following the method of the second fermentation exactly.
