Processing

Of the above six ingredients, excluding autumn stone, mix the remaining five thoroughly and divide them into five portions. Divide the liver into five portions as well. Use a thin-walled black porcelain jar; place a layer of the herbal mixture at the bottom, arrange a layer of liver on top, sprinkle autumn stone over the liver, then add another layer of the herbal mixture, followed by a layer of liver. Top the liver with autumn stone powder. Repeat this process to form 3–4 layers. Cover the liver with the remaining herbal mixture, then add one bowl of rice wine to soak the liver;Take a piece of clean white cloth, dampen it with water, and place 5–6 layers of paper inside the cloth. Use this to seal the jar’s opening tightly, then tie it securely with hemp twine. Place the jar in a double boiler and simmer for one day. As the water in the pot evaporates, top it up with hot water from time to time, ensuring the water does not directly enter the jar;Wait until the aroma of the liver becomes detectable from outside, then open the pot; when there is no longer any trace of fresh blood inside the liver, turn off the heat; wait until all residual heat has dissipated, then remove the liver and immediately chew and swallow a dozen or so slices slowly and thoroughly; once cooled, remove the liver, discard the medicinal mixture, and set the mixture aside. Use it to prepare another liver in the same manner, placing the finished liver in a porcelain bowl.
