1 fat string-chicken (hanged with a rope; remove feathers and feces before use).

Processing
Cut the chicken into 4 large pieces, then add 4 liang of ginger and half a jin of glutinous dates. Place all three ingredients into a large jar along with 5–6 jugs of fine wine. Seal the jar tightly with clay, then simmer in a double boiler for one day. Remove from heat and rinse with cold water to neutralize the heat toxicity.
