Processing

Grind the above ingredients into a fine powder. Take 4 dou of good-quality glutinous rice, rinse thoroughly, then soak for one day and one night. Drain off the rinse water to clarify the rice, and using the method for steaming rice wine, cook the glutinous rice into a porridge. Remove and let cool. Take 20 jin of the original rice rinse water, warm it in a pot, add 1 jin of scallion whites, and bring to a rolling boil several times. Remove the scallion whites, let the liquid cool, and mix it into the porridge. Then stir in 4 jin of fine rice malt powder and 2 jin of coarse rice malt powder.Mix the medicinal ingredients from the previous step into the glutinous rice porridge and stir until well blended. Place the Yanghuo and safflower—each in a separate silk bag—at the bottom of the jar. Then pour the glutinous rice porridge into the jar, press it down firmly, cover the surface, and pour 10 jin of distilled alcohol over it. Ferment for 3 days in spring and fall, 1 day in summer, and 5 days in winter.Later, add another 80 jin of fire wine and reseal the jar tightly. On the 14th day, open the jar and stir the contents with a wooden paddle three to four hundred times. Then add 2 jin of round-cut pork,5 sheng of red dates, and 3 sheng of cooked glutinous rice (all cooled before adding to the jar). Stir from the bottom of the jar 200 times. After another 14 days, press out the clear liquor, transfer it to a jar, seal it, boil it for 3 sticks of incense, and bury it for 3 days. There is no need to boil it in autumn and winter. For the second batch, cook 2 dou of glutinous rice, mix in 2 jin of malt powder and 50 jin of spirits, then place the mixture into the mash and seal it tightly. After 5 days, stir the mash and reseal it. After another 5 days, stir the mash again, and after a further 5 days, press the mash.
